Siomay Bandung (Bandung Steamed Dumplings with Peanut Sauce)

I don't know exactly since when I love to eat this street food. Siomay is similar to Chinese Dim Sum. It is an Indonesian steamed fish dumpling served with Peanut Sauce. A word of Siomay itself can be derived from Chinese Shumai (siu mai or shaomai), a traditional Chinese Dumpling that is considered to have originated from Inner Mongolia.

This traditional dim sum is a popular meal in Indonesia as street food. There are so many types of siomay variations in Indonesian cuisine based on the meat that is used for the filling. We can use king mackerel fish, chicken, shrimp, crab, or mixture of chicken and shrimp. As the recipe I share in here is using mixture of chicken and shrimp as filling. Siomay Bandung is the most famous variety of siomay in Indonesian cuisine.

Siomay Bandung is served with tofu, hard-boiled egg and vegetables such as potato, cabbage, bitter-melon, and the most important component, that is Peanut Sauce. We can add some seasoning for peanut sauces such as chili, lime juice and a little bit sweet soy sauce.

The original recipe is come from NCC. But I made some change to the original recipe due to my liking. And also the recipe of Peanut Sauce or Peanut Sambal. I made my own recipe.

Siomay Bandung

Bandung Steamed Dumplings with Peanut Sauce

Ingredients:

  • 400 g chicken meat, paste
  • 100 g shrimp/king mackerel fish, paste
  • 2 tbs shallots, grated
  • 1 tbs garlic, mashed
  • 2 tsp ground white pepper
  • 3 tbs sugar
  • 3 tsp salt
  • 1 tbs cooking oil or sesame oil
  • 3 eggs
  • 400 g chayotes, grated
  • 450 g tapioca starch
  • Wonton skins
  • 1 medium sized bitter-melon
  • 1 medium sized cabbage
  • Some hard-boiled eggs
  • Tofu

Peanut Sauce:

  • 500 g roasted peanut
  • 200 g red chilies
  • 3 garlic
  • 3 shallots
  • 2 tbs Javanese tamarind juice
  • 2 tbs salt
  • 7 tbs coconut sugar
  • 1,5 liter water

 Directions:

  1. In a bowl, combine chicken meat and shrimp paste with shallot, garlic, white pepper, sugar, salt, and cooking oil. I used food processor to combine it. Then add egg and mix well.
  2. Add grated chayotes and mix well. Add tapioca starch, mix well. Set aside.
  3. Grease the steamer with small amount of cooking oil to make the dumplings will not sticky when steaming.
  4. Siomay : Take a piece of wonton skin, scoop about 1 tbs of filling, shape it using hands. Repeat until all the wonton skin are used up. Steam for 20 minutes.
  5. Potato :  Boiled potatoes until half-cooked then peel the potato's skin. Cut in half and scrape a portion of potato side and fill it with the filling. Steam it. If you want simple way, just boiled it and peel the potato skin without fill it with the feeling.
  6. Tofu : Cut in half and scrape a portion of tofu and fill it with the filling. Steam. You can also just cut in half and directly steam it.
  7. Bitter melon : Cut in several pieces (as your liking). Scrape the seed portion and fill it in with the filling. Steam it.
  8. Cabbage : Cut in several pieces as your liking and steam it. Some people usually make the cabbage roll and fill it with the filling. But I choose simple way, just steam it with fill nothing.
  9. Egg : hard boiled eggs
  10. Peanut Sauce (Peanut Sambal) :
    • Process the peanuts in food processor until smooth. Transfer it into a medium bowl. Set aside.
    • Process red chilies, garlic and shallots until smooth.
    • Heat a skillet and add some cooking oil. Stir fry the smooth red chilies, garlic, and shallot until fragrant. Add the ground peanuts, mix well. Pour water, mix it. Add salt, coconut sugar, tamarind juice, mix well. Wait until the sauce become thick then turn off the heat. Set aside.
Serving suggestions: place all dumplings on a plate. Pour some peanut sauce and drizzle over lime juice, sweet soy sauce, and some ground chilies or you can use chili sauce from the store.

Bubur Pedas Melayu Sambas (The Malay Sambas Spicy Porridge)

I made this to fulfill the monthly challenge of Indonesian Foodblogger. The theme of this month is CONGEE or PORRIDGE. More about this month challenge you can see in here.

 photo challenge9-1_zps51f26b47.jpg

Bubur Pedas is one of traditional food from West Borneo. There are no evidence or history literature that told about this porridge, where it came from or the original recipe. But some people in West Borneo said that this porridge was first time made by The Malay Sambas. The Malay Sambas people live along the northern coastline of West Borneo province in various districts of Sambas Regency. This porridge is the most famous food in West Borneo, no one in West Borneo who didn't know this food. They said that Bubur Pedas is the king of porridge, because all of the ingredients blend into one pot. The original recipe from Malay Sambas stated that this porridge contain of 40 vegetables. Amazing!

From the name, when you hear or read it, maybe you will think that this porridge must be spicy as the name "pedas" in Bahasa Indonesia that means spicy. But believe me that the taste is not spicy at all.

The main ingredients that must be in this porridge, beside roasted and ground rice mixed with finely roasted grated coconut and some spices, is Laksa Leaf or Daun Kesum. Without this leaf, this porridge is nothing. The taste will change and lose the authenticity of this traditional culinary. Laksa leaf is kind of herb whose leaves are used in some Southeast Asian cooking. There is not much Indonesian food using this leaf, i think only Malay ethnic group in Borneo and Sumatra who use this in their cooking. Kesum leaves have strong and sharp scent, like a mixture of Basil leaves and Curry leaves. The taste little bit spicy, maybe that's why this porridge called "Bubur Pedas".

Some people said that we can substitute this leaf with Basil leaves, but believe me my mother ever tried this and the taste totally messed up. You know, it is so hard to find this herb in Java, so if I want to cook this porridge I have to wait my parent go to Borneo and bring this leaves. Specially imported from Borneo, LOL. Luckily, now in Borneo we can find this leaves in dried condition, easier to bring back to Java.

Then, here is the recipe from my mother. I learn to cook this from my mother when she visited my home then I try to made it by myself and it works! So happy...

Bubur Pedas

  • 2 liter water
  • 2 bay leaves
  • 1 stalk lemon grass, crushed
  • 2 cm galangal, smashed

  • 50 g small anchovy, fried

  • 2  tsp salt
  • 1/4 tsp pepper

Lumpia Sayur (Vegetable Spring Roll)

Spring roll or Indonesian called it with "Lumpia", are a large variety of filled, rolled appetizers. The name is a literal translation of the Chinese chūn juǎn (春卷) found widely in Asian and Southeast Asian cuisine. The kind of wrapper, fillings, and cooking technique used, as well as the name, vary considerably within this large area.

I do love spring roll. My mother usually make this for me and my family when Ramadhan (fasting month) come or make it only for snack in our daily. Although fried spring roll is more crunchy than this one, but in my personal taste I like the one that is not fried better than the fried one. I love the authentic taste of the original flavor of spring roll wrapper.

This recipe is adapted from Resep Keluarga Nugraha which I changed the filling. In original recipe used chicken meat, shrimp, and bamboo shoot. Just because my husband is a vegetarian, so I only use bamboo shoot, sprout, and carrot for the filling. I didn't make the dipping sauce as the recipe written. I only serve this with simple chilli sauce, bird's eye chilli pepper, and spring onion.

Brokoli Balut Tepung

Brokoli yang warnanya menarik hati ini *cinta ama warna hijau sih * membuatku berpikir keras bagaimana cara mengolahnya agar sanggup menggugah selera *duh... bahasanya... *.

Bahan-bahan:
  • 1 buah brokoli, siangi, cuci bersih
Bahan Pelapis:
  • 150 gr tepung terigu protein sedang
  • 50 gr tepung beras
  • 25 gr tepung kanji
  • 1/4 sdt baking powder, biar renyah
  • 1/4 sdt merica bubuk
  • 1/2 sdt garam
  • air secukupnya
Bumbu Halus:
  • 3 siung bawang putih
  • 1 sdt ketumbar
  • 2 sdt garam
  • 1 butir kemiri
Cara Membuat:
Kemudian dicuci bersih lagi.
  • Campur bumbu halus dengan bahan pelapis sampai rata. Sedikit demi sedikit masukkan air sambil tetap diaduk rata.

Tahu Balut Daun Singkong

Huaaaa......

Trus gimana dong????
Ya nekat lah... Eksperimen aja...

Tapi ga apa2 lah.. Setidaknya sudah terpuaskan nafsu memasaknya, hahahaha

Bahan-bahan:
  • 1 ikat daun singkong
  • 2 kotak tahu cina, haluskan
  • 1 buah telur, pisahkan kuning dan putihnya
  • Minyak secukupnya, untuk menggoreng

Bumbu:
  • 3 siung bawang putih, haluskan
  • 1 sdt merica halus
  • 1 sdm kecap inggris
  • 1 sdt garam
  • 1/2 sdt kaldu bubuk (aku ga make, optional)

Bahan Pelapis:
  • 1 butir telur, kocok rata

Note:
Kalau mau nambahin daging cincang atau irisan cabe rawit dicampurannya gpp kok, sesuka hati aja.

Cara Membuat:
  • Rebus daun singkong sampai setengah matang. Kalau mau tau dah matang atau belum liat aja warna daunnya, setengah matang pas warna hijaunya masih bagus. Tiriskan.
  • Haluskan tahu cina. Campur dengan bawang putih yang sudah dihaluskan. Tambahkan merica, garam, kecap inggris, kaldu bubuk.
  • Jika rebusan daun singkong sudah dingin. Tata daun singkong dengan susunan yang rapat. Daun singkongnya ditumpuk-tumpuk, sesekali diolesi putih telur biar lengket.

  • Kemudian gulungan singkong tadi dikukus sekitar 30 menit. Sisihkan.
  • Potong kukusan singkong gulung tahu tadi menyerong. Balur di dalam telur. Goreng sampai berwarna kecoklatan. Tiriskan.
  • Hidangkan dengan cocolan sambel. Oishii ne...

Sayur Daun Singkong

Hehehe....

* Gomen (maaf) kalau fotonya kacau gini. Soalnya waktu itu motonya langsung dari wajan. Males mindahin ke mangkuk sih

Bahan-bahan:
  • 200 gr daun singkong, rebus, tiriskan, potong-potong
  • 1 buah cabe merah, iris miring
  • 2 lembar daun salam
  • 2 cm lengkuas, memarkan
  • 1,5 liter santan dari 1 ½ butir kelapa
  • Garam dan gula secukupnya
  • 1 sdm minyak untuk menumis

Bumbu Halus:
  • 8 butir bawang merah
  • 5 siung bawang putih
  • 2 cm kunyit
  • 4 butir kemiri

Good idea...

Bahan :
  • 200 gr kelapa parut kasar
  • 10 lonjor kacang panjang, potong, rebus
  • 100 gr taoge, rebus
  • 100 gr daun kenikir, siangi, rebus
  • 100 gr bayam, siangi, rebus
  • 100 gr kangkung, siangi, rebus
  • 100 gr daun singkong, siangi, rebus, potong-potong

Bumbu Halus :
  • 3 butir bawang merah
  • 2 siung bawang putih
  • 1/2 sdt ketumbar
  • 1 sdm kencur
  • 3 lbr daun jeruk, buang tulangnya
  • 1 1/2 sdt garam
  • 2 sdt gula

Cara Membuat:
  • Haluskan semua bumbu.
